The scene is Jesus and his disciple going through a corn field on the way to or most likely on the way back from church (as church use to be all day but they would feed you). The disciples were hungry and took the corn/field crop rub the husk/peel off and started eating.

So then came the church folks. They did not come in celebration of the Sabbath, or to meet the hungry need. The church folks came to judge them on the law/religious rules. However, the rules they confronted and judged the disciples were not the rules or judgments of God. The question/statement was why are you doing something that is not lawful. Studying deeper in the Greek origin of the word lawful/Exesti really meant out in public in the open for people to see. See church folks want to show they are church folk and you are not. Even when they do the same things privately that you do publicly. Jesus immediately gave them the example of the man after God’s Heart, David. David not only ate the holy priest bread from the priest, and gave it to his men, but he lied and said he was on a mission from Saul (who was on a mission to kill him}. So it is not the act of being Holy but the life of being Holy or sacred to God for God is sacred.

Christ reminds church folk that he is lord of the Sabbath as he was the word in the beginning with God, and was God. The Sabbath is the 7th day after God created everything on, in, around the Earth, and said it was good (on the 6th day). It was finished on the 7th day nothing left to be done for it was Good. God made a Sabbath for man to glorify his creation. This is done in observation, reflection, and recitation by man that God created, completed, and blessed male (man) and female (woman) to be fruitful, multiply, have dominion, and replenish the earth.

Millenniums after God created the world/Cosmos/universe and all that was in it in 6 days, he would send his son to save it in 6 hours the day before the Sabbath. Christ was the sacrificial lamb taking the punishment of our sins of not taking the sabbatical to glorifying God’s creation. He was sacrificed on the last day of creation that God made man to reconcile Man back to God.
Gen 1:31 And God saw every thing that he had made, and, behold, it was very good. And the evening and the morning were the sixth day.
Mar_15:25 And it was the third hour, and they crucified him.
Luk 23:44 And it was about the sixth hour, and there was a darkness over all the earth until the ninth hour.
Luk 23:45 And the sun was darkened, and the veil of the temple was rent in the midst.
Luk 23:46 And when Jesus had cried with a loud voice, he said, Father, into thy hands I commend my spirit: and having said thus, he gave up the ghost

The Son of Man went to the grave taken down from the cross and place in the tomb hours before sundown leading to the Sabbath day as the setting of the sun and as the seed to the ground for the wages of our sin which is death. The Son of God was set to rest on the Sabbath publically but privately was taking the keys to hell and death from the accuser of God to man, man to God, and man to man. The first day of the week of creation God said “Let there be light”. God raised his son on dawning of the 1st day of the week for us to see the light being the Lord of the Sabbath to praise and glorify God’s creation a new dawn, a new beginning.
Joh_8:12 Then spake Jesus again unto them, saying, I am the light of the world: he that followeth me shall not walk in darkness, but shall have the light of life.

The stone of the law of the Sabbath was rolled away and an empty open grave is there to prove the Lord of the Sabbath lives. The Sabbath was not created to stop living but to recognize the God of the living. What was revealed is the life that God Gave and the life that the lord of the Sabbath Christ Jesus Saved.
